- 3–4 slices roasted turkey breast
- ½ ripe avocado, sliced
- 1 small handful baby spinach or rocket

How to make it
1. Warm the tortilla. Place it in a dry pan over medium heat for 20–30 seconds per side. This makes it pliable and adds a light toast.

2. Cook the egg. Whisk with a pinch of salt and scramble softly in the same pan with a splash of olive oil. Pull off the heat while still slightly glossy.
3, Build the base. Spread the yoghurt or hummus across the tortilla, leaving a 2cm border. Squeeze a little lemon over it.
4. Layer. Spinach first, then turkey, then avocado, then egg if using. Season with pepper and chilli flakes.
Wrap and slice. Fold in the sides, roll tightly from the bottom up, then slice on the diagonal. Eat immediately, or wrap in parchment for on-the-go.
